Homemade Biscotti

Paul and I spent last Friday night at his parent's house, Jenny and Rob came as well. It was nice to just hang out and catch up before the wedding.  On Saturday, Sandy and I made biscotti which will be a part of the welcome bags for guests and fits in perfectly with our theme...if you are attending the wedding...you shall see!  I think we made close to 500 biscotti cookies?? I seemed like a daunting task at first but with the two of us working together (and Paul helping every now and then :) ) and her organization skills, it went smoothly and efficiently!

Recipe:
2 ½ cups flour
1 teaspoon baking powder
½ teaspoon salt
1 ½ cups sugar
½ cup unsalted butter, softened
2 large eggs
½ teaspoon almond extract
1 ½ cups dried cranberries
1 egg white, beaten till frothy
6 oz. white chocolate

Preheat oven in convection to 350°F. Line baking sheet with parchment.
Combine flour, baking powder, and salt to blend. Beat sugar, butter, eggs, and
extract until well blended. Mix in flour mixture and then the cranberries. Divide
dough in half. Using floured hands, shape on a rack. Maintain
oven temperature.
Transfer logs to work surface. Using serrated knife, cut logs on diagonal into
½ inch wide slices. Arrange; cut side down on baking sheet. Bake 5 minutes, turn
biscotti over and bake just until set, about 3 minutes. Transfer to a rack. Melt
chocolate. Using a fork, drizzle chocolate over biscotti. Dry 30 minutes.each piece into 2 ½ inch wide,
 9 ½ inchlong, 1 inch high log. Place each on a prepared baking sheet. Brush each with egg
white. Bake until golden, about 35 minutes. Cool completely
