My version of an Egg McMUFFIN


This past Saturday Paul and I went to the Gym and then came back to make a healthy and fun breakfast! I consider them my version of an Egg Mc'Muffin - only because you actually use a muffin pan. 
 It is very simple: coat the pan with non-stick spray, place the bread in the pan, lay the bacon in next (helpful hint: cook the bacon beforehand so that it is almost done - it will save you a lot of time).
Crack the eggs directly into the pan - if you don't want your eggs to be slightly runny just poke the yolk with a fork a few times.


Season to taste with Salt and Pepper.
It is always fun to have someone else in the kitchen - Paul was making his famous shake and watching Game Day!
Put them in the oven at 350 degrees for 20-25 minutes and you are done!  If you beat out the bread and make it thinner, the eggs will cook in less time.
Overall we really liked the breakfast! You can get really creative with it - I added cheese to a few of them and next time I might change out the bacon with sausage!
